4 cups sliced fresh rhubarb

2 cups sliced fresh strawberries

1 cup granulated sugar

1 tablespoons cornstarch

1 teaspoon vanilla extract

1 tablespoon fresh lemon juice

2 cups all-purpose flour

2 Tbsps granulated sugar

2 teaspoons baking powder

¼ teaspoon salt

1/4 cup cold unsalted butter, cubed

1/4 cup vegetable shortening

½ cup whole milk

1 egg



Instructions


  1. Preheat your oven to 375°F (190°C) and lightly grease a 9 × 13-inch baking dish.

  2. In a large bowl, combine the rhubarb, strawberries, sugar, cornstarch, vanilla, and lemon juice. Stir until everything is evenly coated, then transfer the fruit mixture to the prepared baking dish.

  3. In another bowl, whisk together the flour, sugar, baking powder, and salt.

  4. Cut in the cold butter and shortening using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.

  5. Stir together the milk and egg, then pour into the flour mixture. Mix just until combined.

  6. Drop spoonfuls of the topping evenly over the fruit, leaving a few small gaps for the fruit to bubble through.

  7. Bake for 45–50 minutes, or until the topping is golden brown and the fruit is bubbling around the edges.
