Why I Think 2027 Brides Should Serve Dessert During Cocktail Hour

There I was, standing beside a beautifully styled dessert bar, doing something I never expected to be doing at a wedding.


Politely swatting away guests.


"Not yet!" I laughed as another curious hand reached toward the desserts. The reception hadn't even started. Dinner was still to come. Dessert wasn't supposed to be served for hours.


And yet, people couldn't resist. They wandered over, admired every detail, pointed out their favourites, asked questions, and instinctively wanted to start tasting.


As I drove home that evening, I couldn't stop thinking about it. Why not? Why not serve dessert during cocktail hour?

We've Always Done It This Way... But Does It Make Sense?


Wedding traditions exist for a reason, but every now and then it's worth asking whether they're serving the experience we want to create.


Dessert has traditionally been the grand finale of the meal. Dinner is finished, speeches are over, guests have been sitting for a while, and then the cake is cut and desserts are served.


But by that point, something has changed. Everyone is full. Some guests have already left. Others are more interested in dancing than another bite to eat.


The desserts are still beautiful, but they don't always receive the attention they deserve.



Cocktail Hour Is Full of Opportunity


Now think about cocktail hour. It's one of the happiest parts of the day.


The ceremony is over. Everyone is celebrating. Guests are reconnecting with family, meeting new people, and sipping cocktails while anticipation builds for the reception.


It's a unique moment. No one is rushing anywhere. No one is tired. No one is overly full. They're simply enjoying the excitement of what's to come.


That's exactly why I think a dessert bar belongs there. Imagine guests strolling through an elegant display of miniature desserts, choosing a few favourites, discovering unexpected flavours, chatting over tiny bites, and snapping photos because the display is simply too beautiful not to.


Suddenly, dessert isn't just something you eat. It's something you experience.





Your Guests Are Already Looking for Something to Do


One thing I've learned after nearly a decade in the wedding industry is that guests naturally gravitate toward experiences.


When there isn't something drawing them in, cocktail hour often becomes a period of waiting. Waiting for the reception. Waiting for dinner. Waiting for the doors to open.


A thoughtfully designed dessert bar changes that. It gives guests something to explore. Something to talk about. Something to enjoy together.


It creates movement, conversation, and excitement before the reception has even begun. And isn't that exactly what great hosting is all about?

It's About More Than Dessert


As someone who creates cakes and dessert experiences for weddings, I could easily tell you how beautiful a dessert bar looks.


But that's not really why I love this idea. I love it because of what it creates. Shared moments. Unexpected conversations.


People gathering around one beautiful display, pointing out their favourites, encouraging each other to "try this one," laughing, taking photos, and making memories before they've even found their seats for dinner.


The desserts become part of the atmosphere instead of simply the ending to a meal.



A New Way to Think About Wedding Desserts


Maybe this idea won't be for every couple.


Traditions matter, and there will always be something special about cutting the wedding cake later in the evening.


But if your goal is to create a wedding that feels memorable, interactive, and full of thoughtful moments, perhaps it's time to think differently about when dessert is served.

After all, the guests at that wedding told me everything I needed to know. No one asked if dessert was available. They simply assumed it should be.


Maybe they were onto something. And maybe the best wedding trends aren't about adding more. Maybe they're about putting the right experience in the right moment.
